Fructose Malabsorption Recipes: Rainbow Ice Cream

This is a delicious dessert you can have even on the elimination diet.  You need an ice cream maker for this recipe, but it’s a good investment!

Ingredients:

  • 1.5 cups whole milk
  • 2 cups dextrose
  • 3 cups heavy cream
  • 1 tablespoon vanilla extract***
  • 5 Sweetarts, one of each color

Directions

Using a hand mixer, combine milk and dextrose until dextrose is dissolved.  Stir in heavy cream and vanilla.  Turn on your ice cream machine and pour in mixture.  Leave it in for about 25 minutes.  Transfer into a container with a lid and put it in the freezer (wait about 2 hours before eating).

To Serve

This ice cream gets a bit harder than normal, and I’m guessing it has something to do with the dextrose.  So take it out of the freezer half an hour to an hour before scooping.

This is pretty good vanilla ice cream on its own, but a tad boring after a while.  To liven things up: crush each Sweetart with the back of a spoon (I put each one in a small baggie to make it easier, but then I felt really wasteful).  Sprinkle the crushed powder on top of the ice cream.

Elimination Diet safe: YES!

***vanilla extract may have excess fructose, but so far I can’t find any concrete word on it.
