Fructose Malabsorption Recipes: Bread Crumbs


I was really craving chicken nuggets the other day, and thought I could make some, but I couldn’t find any gluten free bread crumbs without corn or some kind of juice.  So I made my own!


  • 4 pieces of Whole Foods All Natural Gluten Free Sandwich Bread (or other bread with acceptable ingredients)


Preheat the oven to 250 degrees.

If the bread is frozen put it in the toaster so that it gets a bit warm, but doesn’t start to toast.  Cut the bread into crouton-size pieces and put them in a food processor or blender until they have all been chopped up (I used a blender and it helped to pulse it so the chunks would sort of sink into the middle).  Spread the crumbs out on a baking tray and put in the oven for 25 minutes.

If the crumbs aren’t fine enough for you, just put them back in the blender/food processor.

The chicken nuggets I made weren’t that great, so I’ll keep working on that recipe!
