Fructose Malabsorption Recipes: Baked Potato

I never ate potatoes before being diagnosed with Fructose Malabsorption unless they had been in the deep frier.  But having limited options on the Elimination Diet, I gave this baked potato a try and found it to be delicious.  The bacon really helps…

Ingredients

  • Large potato
  • 2 tablespoons of olive oil
  • 1/4 tsp salt
  • 1 piece of bacon (make sure there wasn’t anything added to it, like honey!)
  • Sour cream
  • Shredded cheddar cheese
  • 1/2 tbsp butter
  • salt
  • pepper

Directions

Heat the oven to 350 degrees.  Wash the potato to get all the dirt off.  Poke a few holes in it with a knife and then rub the olive oil and salt over it.  Wrap it in tinfoil and bake in the oven for an hour, or until it’s soft.
Meanwhile, fry the bacon in a pan until it is crispy and let it cool.  Chop it up into little bits.

Slice it down the center and add the butter, bacon, sour cream, cheese, salt, and pepper.

Elimination Diet safe: Yes!
