This is a favorite meal in my house–meaning, it’s my favorite. Originally it’s from Martha Stewart’s website, with some adjustments.
Ingredients
- 2 teaspoons of extra-virgin olive oil
- 1 package of Hillshire Farm Lite Smoked Sausage (I use 2)
- 2 bone-in chicken breast halves, skin removed, halved
- Coarse salt and ground pepper
- Dash of asafoetida
- 4 Yukon potatoes
- 3 celery stalks
- 1 cup of water
Directions
Cut sausage into 1-inch pieces. In a cast-iron pot, heat the olive oil over medium-high, add the sausage and stir occasionally for about 4-6 minutes. Transfer the sausage to a plate.
Season the chicken on both sides with salt and pepper and add to pot. Cook about 7 minutes on each side. Move the chicken over to the plate with the sausage.
Chop the celery into 1/2-inch pieces, halve the potatoes, quarter them and then cut them one more time. Add the asafoetida, celery, and potatoes to the pot, stirring often for about 5 minutes.
Put the chicken and sausage back in, and add the water. Bring to a boil and then let simmer for 20 minutes with the cover on.
