Whole Chicken__No Sugarless Gum

Everyone should know how to make a whole roasted chicken.  (Except vegetarians.)  Not only is it easy, but you can use the carcass to create your own chicken stock, which is important if you’re sensitive to garlic and onions since they’re in just about every store-bought version.


  • One whole chicken
  • 1 lemon
  • Olive oil
  • 1 tsp salt
  • 1/4 tsp pepper


Heat the oven to 400 degrees (375 for convection oven).  Cut the lemon in half and put them in the cavity (or “the chicken’s vagina” as my mom would say).  Rub the olive oil all over the outside of the chicken and then rub in the salt and pepper.

Place in the oven one hour.

Here are some instructions on how to carve a chicken.  It’s a lot better than just stabbing at it like I usually do.
