Mashed Potatoes__No Sugarless Gum

Isn’t it nice to have a recipe that doesn’t require any ingredient substitutions?  I just wish I liked mashed potatoes more…

Ingredients

  • 5-6 pounds of Russet or Idaho potatoes
  • 1 stick of butter
  • 2-3 cups of milk
  • Salt and pepper

Equipment

  • Large pot
  • Stand or hand mixer and bowl

Directions

Peel and quarter the potatoes.

Bring a pot of water to boil and add the potatoes for about 15 minutes.

Drain the water, add the potatoes, melted butter, and salt and pepper into a large bowl. Using a mixer, start mixing the potatoes while slowly adding in the milk.  Keep adding milk until the potatoes are nice and creamy but still thick.  You don’t want them to be liquidy.

Elimination Diet safe: Yes!
