You know that feeling you get when you realize you have nothing you want for dinner? And you get all depressed and even kind of dread when the time to eat rolls around, knowing you’ll either have to choose something lame or starve? This recipe is the cure!!! I’ve been eating these for the past 3 weeks and loving it.
And I know it only counts as an “easy recipe” if you make the tortillas and chicken ahead of time, but even that part is simple and you can get it all done on the weekend and store it in the fridge!
- 1/4 tablespoon of butter
- 2 homemade tortillas
- 1/3 cup of cubed chicken
- 1/3 cup of mozzarella cheese
Add butter and coat the pan.
Once the butter has melted, put one tortilla in the pan, spread half of your cheese on top, then do the same with the chicken and finally the rest of your cheese. Cover with the remaining tortilla.
When your tortilla on the bottom has turned golden brown, flip over and cook on the other side.
