Fructose Malabsorption Recipes: Peanut Butter Mug Cake

Peanut Butter Mug Cake__No Sugarless Gum

I’ve had some really great days in my life: the day I got promoted to my dream job, my wedding day, and the day I made this cake.  You may think I’m being silly, but cake is kind of central to my life.  For example, when I got married there was cake.  Soon after my promotion I was presented with a cake.  If these things weren’t important there wouldn’t be cake, which makes cake important.  That’s my philosophically existential tip for the day.

This recipe was found on Kirbie’s Cravings and is so easy to make!  I know the cake in my pictures isn’t in a mug, but I think a bowl just makes it classy.

  • 2 tablespoons of creamy peanut butter (100% peanuts)
  • 2 tablespoons of dextrose
  • 1 tablespoon of milk (I use goat milk)
  • dash of salt
  • 1/4 teaspoon of baking powder.
  • 1-2 tablespoons of water (or an egg or 1/4 cup mashed banana)

Mix together all the ingredients except the water.  Peanut Butter Mug Cake3__No Sugarless Gum

When combined, add in 1 tablespoon of the water and mix.  You want the mixture to be creamy, but not watery.  If it’s still a bit too thick and it’s a little hard to stir, add in the second tablespoon.

Microwave for 1 minute and 15 seconds.

Let cool.

Elimination Diet safe: No.

  1. I love this!!! I have made this quuuuite a few times since you posted it at the beginning of the month. Sometimes I even get a little crazy and turn it into a chocolate peanut butter cake by adding 1/2 teaspoon of cocoa powder to the mix!!! I sure am a sucker for a quick sweet that’s not sweet tarts, bottle caps, and smarties. haha.
