Don’t let this picture turn you off to this recipe. I had forgotten to take a picture when I first made this so all I had to use was my leftover reject chicken. Still delicious though.

- Two chicken breasts
- Salt and pepper
- 4 slices of bacon
- 1 green pepper
- 2 slices of cheddar cheese
Set the oven to 350˚.
Butterfly the chicken breasts and sprinkle the insides with salt and pepper.
Cut up the pepper into strips or tiny little chunks (I prefer the chunks) and lay them inside.
Add the cheese on top of the peppers, tearing away the parts that hang over the sides.
Close up the chicken and wrap with the bacon.
Place on a baking tray and put in the oven for about 30 minutes.
When the internal temperature is 165˚, they’re done.
Elimination Diet safe: Yes! (without the peppers)
