Following the autoimmune Paleo protocol while still trying to avoid FODMAPs (especially fructose!) doesn’t leave me with a whole lot of options. Which is why I’m trying to vary the meat I consume as much as I can…except for fish. Yuck!
I found this ground lamb at my co-op and boy, is it ever good. All it needs is a few seasonings and it’s good to go! Nothing fancy required–just how I like it.
- 1 tablespoon of lard or coconut oil
- 1 pound ground lamb
- 1 tablespoon of turmeric
- 1/4 teaspoon of oregano
- 1/4 teaspoon of basil
- 1/2 teaspoon of marjoram
- 1/2 teaspoon of coconut aminos (or soy sauce)
- 1/2 teaspoon of fish sauce
- 1 head of lettuce of your choice
Add the lard/oil in a pan over medium-high heat.
When that has melted, add in all the ingredients except lettuce and stir very well until meat is cooked.
Wash and dry lettuce to be used as wraps for the meat.
Elimination Diet safe: Yes! (Just omit the coconut aminos and use more fish sauce)
