Making bread can’t possibly be any easier than this. Or more delicious. I found this recipe on Supermom CEO and didn’t have to change a thing! You can use any nut butter you want (I used almond) even peanut butter! Except, I wouldn’t use peanut butter. It left a weird burning feeling on my tongue.
If you’ve given up wheat and never had a nut-based bread before you’ll be really pleased with the texture. Use this bread for sandwiches, or just slather on Strawberry Jam! I made some great little grilled cheese sandwiches this weekend.
Ingredients
- 1 cup of nut butter (almond=v. good)
- 4 eggs
- 1 teaspoon of baking soda
- pinch of salt
Directions
Preheat the oven to 325˚.
Stir the nut butter so all the oil is mixed in before measuring it out.
Beat the eggs for 30 seconds on medium high with a mixer using the egg beater attachment.
Add the rest of the ingredients and mix together.
Pour into a bread pan (or use a mini one like I did), and bake for 30 minutes or until a toothpick can be inserted in the center and come out clean.
Elimination Diet safe: No.
