I hope everyone had a nice Halloween and resisted eating candy!  The holiday season is an especially rough time of year for us.  Halloween candy, Thanksgiving feasts, Christmas cookies!  And tons of pumpkin-spiced foods.By now I’ve posted approximately a million different pancake recipes.  But I like to post a variety because not all ingredients work for everyone in groups like this!  This is really simple if you are just fed up with flours, and delicious even if you’re not!

Ingredients

  • 1 cup of pumpkin puree
  • 6 eggs
  • 2 ripe bananas
  • 2 tablespoons of dextrose (optional)
  • pinch of salt
  • oil or lard for cooking

Directions

Heat a large skillet over medium-high heat.

Add all ingredients into a food processor or blender and mix until smooth.

Grease or oil pan.

Add about a 1/4 cup of batter into skillet.  (You can do a few at once.)

Once you see bubble start to form at the top, flip the pancake over and cook until done on the other side.

These pancakes are a tad more delicate than traditional ones, so be careful flipping!
