I think I finally understand the difference between being tired and being exhausted.  When I was younger I thought that I was tired all the time.  That being tired was the reason it was nearly impossible to get out of bed in the morning, and why I would have to lay down on the bathroom floor while the shower warmed up because my head would swim and my vision would go fuzzy.  But that was exhaustion.  That was because I wasn’t eating right.  Eliminating fructose was really helpful for that.  Now I have so much more energy and can annoy my cat right away in the morning with my good mood while she screams at me for food.

A while ago someone asked me if I could make some homemade suckers and as much as I love requests, I didn’t have the means to do so.  Now with Madhava’s new cassava sweetener, I’m finally able to deliver!  And I was shocked at how incredibly easy it was!  There are really only three steps and they are fool proof (the fool being me).

  • 1 cup of dextrose
  • 1/2 cup of water
  • 1/3 cup of cassava sweetener
  • 1/2 teaspoon of flavoring
  • 1/4 teaspoon of natural food coloring

Special Equipment

  • Candy thermometer
  • Sucker molds (you can use small silicone molds for hard candies too, like the candy buttons below)
  • Sucker sticks

Put all ingredients except coloring and flavoring in a small pot and turn heat on high until the temperature on the thermometer reads 300˚.

Remove from heat and stir in flavoring and coloring for about 2 minutes.

Pour into your molds and let sit for about 20 minutes.

Elimination Diet safe: No.
