Fructose Malabsorption Recipes: Homemade Tootsie Rolls

Tootsie Rolls3__No Sugarless Gum

I have some scary and important news for you.  I used to buy all my supplements on Amazon (and I take a lot) since I have Amazon Prime and get free two-day shipping.  My doctor knew that I did this and knew that I was still having a lot of problems (like bloating) and sent me an article about how dangerous buying from there is.  (Read it here.)  It details how shell companies sell counterfeit, expired, or stolen pills for a discount and they could potentially contain harmful substances…even sawdust!!!  Oh, and this wasn’t written by some rando, it’s by a guy who used to work for the FDA!

So I quickly got rid of all my supplements and started to buy from a reputable source.  I didn’t see any of my symptoms abate, but I felt better knowing for sure I was getting the good stuff.

But there was something I forgot.  I take CALM everyday to help with constipation but since it doesn’t come in a pill form (it’s just a powder) I wasn’t even thinking of it as a supplement.  Well, about a week ago I got a new bottle from Amazon and not only did it taste weaker, I got the exact same taste in my mouth as when you have a tooth ground down at the dentist.  Ew!!!

I should have known, since it’s about half the price on Amazon as it in on the real company’s website (ugh, it’s expensive, but being constipated is the worst).  BUT, I got some from the legit company and I was able to cut the dose I was taking way down AND my bloating has gone down a bit.  I also used to get pretty bad stomach cramps for a second after taking it and that has gone away as well.  So shady!!!  And frustrating, seeing as it was probably doing damage to my gut while I’ve been desperately trying to heal it.

On to the fun stuff.  This is the last recipe I have for you using the new cassava sweetener from Madhava (for now!).  And good news, you don’t need a candy thermometer for this one!  It’s a very very simple recipe, unlike the salt water taffy I tried to make recently, which was a huge fail and made my arms really sore.

Ingredients

  • 1/2 cup of cassava
  • 1/4 cup of cocoa powder
  • 1 teaspoon of vanilla extract
  • 1 tablespoon of melted butter (coconut oil works too)
  • 1/4 cup of dextrose
  • pinch of sea salt
  • 1 cup of tapioca flour

Directions

Combine everything together in a mixing bowl and mix on medium until well blended.

Add in the tapioca starch 1/4 cup at a time until it gets too stiff and you can’t use your mixer anymore.  Continue the process using your hands.

Once all the tapioca is well incorporated, let the dough rest in a flattened ball on a piece of wax paper for 10 minutes.

Flatten the dough further until it’s about 1/2 inch thick.

Cut into desired sized pieces (I like the longer tootsie rolls best).

Wrap each in wax paper and store in the fridge.  The texture will be most like the store-bought kind if eaten straight from the fridge.

Elimination Diet safe: No.
