I have been trying a lot of foods lately that I wasn’t able to eat before, and they have all been a great success. Mostly I’m trying vegetables and spices since I’m going to continue to eat healthy from now on, but I did splurge on pizza for my birthday with no consequences! I really think my fructose malabsorption is gone. I don’t really want to take the test again, since I’m afraid of that liquid fructose you have to drink, but I’m curious. I’ve been trying a lot of new foods lately to great success. Recently I tried garlic and I think I might have an allergy. Not a life-threatening one, like people have with peanuts, but like a seasonal ragweed allergy. Isn’t that kind of weird? And annoying because garlic is delicious. But no GI distress from it, so that’s at least something.
This is one of my new favorite recipes. We’ve been having it once a week for a while now. It’s a great way to have tacos if you’re avoiding grains because that leaves you with few options for taco-meat vehicles.
You can use a sweet potato or regular potato for this recipe. I like a regular one and my husband prefers a sweet potato (a REAL sweet potato, not an orange sweet potato YAM. Don’t get me started on those…). Continue reading
Recently I was talking with my grandma and the subject of this blog came up. She said she loves to read it when she wakes up in the middle of the night and can’t get back to sleep! I posted a while back about a Cinnamon Crusted Banana Bread that I really like. In the post I included a link to a different bread you can make if you have an egg allergy or avoid eggs for another reason. I was having a bit of an allergic reaction to eggs for a while, so I had to switch over to that other bread…and found that I liked it way better! Getting probiotics into my diet is really important to me. Treating SIBO destroyed all the bad bacteria in my gut, and the good stuff as well (although with my past diet I really doubt there was much of the good stuff there anyway). So I feel like I’m probably repopulating a wasteland right now.
I take a high-quality probiotic capsule, and eat lacto-fermented vegetables daily, but sometimes I feel like it’s not enough.
Enter: coconut milk kefir. This is a beverage that is fermented by milk kefir grains, and can be made with any kind of milk! The taste is…interesting. Some describe it as tangy, but I find it a little cheesy. I’ll admit it’s not my favorite. But for me this is a health thing, and if you add regular coconut milk to it it’s pretty good.
Last weekend I made a really great bread from the blog An Edible Mosaic. I’m not going to rewrite the recipe here because I didn’t need to substitute anything! Although I did use water instead of coconut milk and it worked great. Though it looks a little different from the original and I’m guessing that’s why.
I really wanted to get that cool break in the top of the bread that the original pictures had. I’m not sure what caused it (or why I was so into it) but I guess it just happens! Continue reading
I have some scary and important news for you. I used to buy all my supplements on Amazon (and I take a lot) since I have Amazon Prime and get free two-day shipping. My doctor knew that I did this and knew that I was still having a lot of problems (like bloating) and sent me an article about how dangerous buying from there is. (Read it here.) It details how shell companies sell counterfeit, expired, or stolen pills for a discount and they could potentially contain harmful substances…even sawdust!!! Oh, and this wasn’t written by some rando, it’s by a guy who used to work for the FDA!
So I quickly got rid of all my supplements and started to buy from a reputable source. I didn’t see any of my symptoms abate, but I felt better knowing for sure I was getting the good stuff.
But there was something I forgot. I take CALM everyday to help with constipation but since it doesn’t come in a pill form (it’s just a powder) I wasn’t even thinking of it as a supplement. Well, about a week ago I got a new bottle from Amazon and not only did it taste weaker, I got the exact same taste in my mouth as when you have a tooth ground down at the dentist. Ew!!! I have some exciting news to share with you all. A while ago a company called Madhava contacted me and they have developed a new sweetener that is fructose free! It even says so right on the bottle:
Just look at those magic words! It’s made from cassava and it’s 35% glucose, 35% maltose, and the rest is complex carbohydrates. It’s also organic and non-GMO, which I love! I’ve tested it extensively to make sure it doesn’t make me sick and I’m certain that it does not. (Although I found something else that does. Blerg.)
They sent me a couple of bottles to try (I’m not getting paid for this, though, don’t worry!) so I could make a few recipes. This sugar behaves like a corn syrup, so didn’t want to just bake a normal dessert recipe and replace table sugar with this. I wanted to make something we can’t make with dextrose and certainly can’t have as a store-bought treat.
I gave up dairy a while ago for my health (except occasionally some butter) and it has been really hard! It feels like it’s been forever since I’ve had a good creamy recipe. This one really satisfies that craving. I was worried it might be a little bland, but I think it was just the colors psyching me out. It was actually really flavorful! This recipe may take a bit of planning if you don’t have all the ingredients on hand, so make sure you have enough time. It’s a great recipe to make early on and cook later too. Continue reading

I never really ate bell peppers in the past, but lately I’ve been getting into them. And the nice thing is there are different options depending on how much fructose you can handle. If your tolerance is low (or you don’t know how much you can eat yet) you can use the green peppers. Red has the highest amount of fructose. Yellow and orange are higher than green but I haven’t been able to find any proof they are as high as red. They certainly don’t taste as sweet.
You can use whatever ground meat you want for these, but I would recommend lamb or beef. Continue reading
