Fructose Malabsorption Recipes: Cinnamon Tea Cake

Cinnamon Tea Cake2__No Sugarless Gum

Recently I was talking with my grandma and the subject of this blog came up.  She said she loves to read it when she wakes up in the middle of the night and can’t get back to sleep!  Glad I can bore you, Grandma!  (She did clarify she just reads it until her midnight martini kicks in, and THAT’S how she falls asleep…)

I posted a while back about a Cinnamon Crusted Banana Bread that I really like.  In the post I included a link to a different bread you can make if you have an egg allergy or avoid eggs for another reason.  I was having a bit of an allergic reaction to eggs for a while, so I had to switch over to that other bread…and found that I liked it way better!  It tastes a lot less banana-like and I enjoyed the texture more. Fructose Malabsorption Recipes: Strawberry Coconut Fat Bombs

_DSC7926

Since being diagnosed with SIBO I’ve had to go on a low-carb diet to try and starve the little buggers.  This means that my body has switched over into Ketosis burning fat for energy instead of carbohydrates.  I actually like it because it’s easier for me to not feel hungry, whereas in the past I was pretty much constantly snacking.
Fat is not your enemy.  If it is high-quality then it is good for you!  Someone at work saw me eating these and when I told her they were fat bombs she looked at me like I was nuts!  “Well you can afford to eat like that because you’re skinny,” she said.  But a lot of people go on a ketogenic diet to lose weight!
I love eating these softened to room temperature.  It’s a lot like ice cream!

Ingredients

  • 1/2 lb of fresh strawberries
  • 1/2 cup of coconut butter
  • 1/2 cup of coconut oil
  • 2 tablespoons of dextrose
  • Pinch of salt

Directions

Put the jar of coconut butter in a small pan with water and turn on medium-low to soften.

Wash and cut the tops off the strawberries and put in a blender or food processor with the rest of the ingredients.

When the coconut butter is soft and easy to scoop, add to the rest of the ingredients and puree until smooth.

Distribute puree into silicone molds and put in the freezer for about half an hour.

Elimination Diet safe: No.

Fructose Malabsorption Recipes: Almond Flour Cake with Strawberry Frosting

Almond Flour Cake4__No Sugarless Gum

Yesterday was my birthday.  And as I mentioned last year in my Birthday Cupcakes!!! post, I have high standards for the day.
Determined not to let my recent SIBO diagnosis put a damper on things, I did quite a bit of research and prep to make sure I had proper cake and frosting options. Continue reading

Fructose Malabsorption Recipes: Birthday Cupcakes!!!

Birthday Cupcakes3__No Sugarless Gum

Today is my birthday, which means there is no one more important in the world than I am (except Enrique Iglesias–happy birthday, Enrique!).  I am one of those people who will forever be obnoxious about the annual celebration of her birth.  When asked to do something unpleasant I say “but it’s my birrrrthdaaaay!!!!”  And I expect to be treated like a queen by coworkers to whom I have never spoken.
And of course, I require cupcakes. Continue reading
